👋 Hello everyone, and happy Independence Day!
How is it possible that this is the fiftieth issue of Keep Going?! That means I’ve been sending this out for nearly a year. It’s like time is slowly, rapidly, inching and speeding along.
My brain has been a little on the busy side lately (which is a nice way of saying my anxiety has been crazybad), so I’m working on slowing it down, lowering expectations of myself, and enjoying each moment. I get caught up in trying to do all the things (and do them perfectly), and then I feel bad that I cannot do all the things, and I forget that I still do many more things than a lot of people, and therefore I could probably do fewer things and still be okay.
So in the spirit of doing fewer things, here is a short and sweet issue for you with the two most important parts: eating and laughing.

🥗 Eating
Justin whipped up this lovely dinner for us—rice, lentil dal and broccoli, plus mushroom quesadillas, because why not?
I made some tofu feta, which is one of my favorite things, which meant easy Greek salads all week. (Greens, cucumber, mushroom, tomatoes, pepperoncini, chickpeas, tofu feta…)
I was planning to make some kind of noodle-peanut situation, but once I made the peanut sauce I remembered spring rolls, so tofu spring rolls it was. On this day we didn’t have any lettuce, so I used finely shredded cabbage, which worked great! (Also pictured is my usual nojito, which Justin now makes me with any flavor of bubbly water. This week I’ve been having strawberry nojitos, and let me tell ya, they’re really good.)
Ramen with broccoli, soft-boiled egg, and kimchi. And puzzles.
I had lunch by myself at True Food Kitchen. It was so good! I had a watermelon lemonade and their “kale cobb salad” - it has greens, sugar snap peas, tomatoes, chickpeas, avocado, cucumber, pickled jicama, and I opted for shrimp instead of gorgonzola.
I brought home all the desserts from Elizabeth Street Cafe. Their macarons are insanely delicious, but my favorite was this chocolate-sesame-crunch thing. It was SO GOOD.
